The menu this week primarily comes from a Special Edition of Gourmet Quick Kitchen magazine. I hadn't looked at it in a while and found lots of recipes that we've enjoyed previously and a few new ones to try.

As I've mentioned, on one of our first dates, Pete won my stomach (and heart) over with the most amazing Amatriciana Sauce. His thoughtfulness shown through in many ways that day. Before we sat down to eat our dinner, he asked if we could walk some over to a friend whose boyfriend was working on her birthday. To continue spreading the love, we share with you the recipe for this simple yet extraordinary sauce to make for your loved ones on Valentine's Day.

Happy New Year!!! This week we’ll enjoy recipes from the January 2011 issue of Bon Appetit. Most of the recipe links are available below. But to enjoy all the meals, pick up a copy of the excellent January issue.

While we generally eat vegetarian meals at least twice a week, this year we are dedicating the beginning of our week to Meatless Mondays. The goal of the nonprofit organization is to encourage individuals to cut out meat one day of the week to improve personal health and the health of our planet. Menu for the Week of December 20, 2010

It is finals week at University of Minnesota, Duluth. Pete is scheduled for two evening finals this semester, so we will enjoy simple but tasty fare those nights. In between the exams, we’ll celebrate the Winter Solstice on Tuesday, with Swedish Meatballs, and the end of the semester on Thursday, with SUPERIOR FISH TACOS. The fish tacos recipe won BEST TASTING in the Whole Foods Eat Local Recipe Contest. Exciting!! Sausage & Bean Ragu with Quinoa Pasta served with a Side Salad
Quinoa is a grain with high protein content and gluten-free. It can now be found at most grocery stores or a co-op. I usually add a teaspoon of red pepper flakes as well.

Spicy Tofu – adjust to your spice level
Carrot Cabbage Slaw with Cumin Vinagrette
