Lunch Menu for the Week of 9/20

Things are on overdrive at our house! A certain 5 year old is VERY excited about starting Kindergarten tomorrow. Yesterday we made our last morning visit to the Children's Museum and today we enjoyed the zoo.

But Thursday can't come soon enough in O's mind! We now know his teacher and room number, and just have to get out the door in the morning-- I think O will be up at the crack of dawn waiting for that to happen! Here are a few more lunch ideas to draw upon and I'm including the menu I posted last week as well.

Yogurt with Granola and Dried Cranberries for toppings

Over the weekend, I am going to try the following eggless zucchini bread recipe. I’ll subtract the nuts (for Skoogie’s sake) and make into muffins.

Japanese Cold Noodles
Apple Sauce
Zucchini Muffin

On Monday night we are going to have the Japanese Cold Soba Noodle dish, adding edamame for more veggies. O likes all things Asian, so we have the ingredients in the house but a larger grocery store or Asian Market would have items for the ponzu sauce. We’ll make extra so we can have it for lunch the next day.


Bagel with Smoked Salmon & Plain Cream Cheese

My kids love smoked salmon from Northern Waters Smokehaus (, and having it on a bagel with cream cheese is an extra special treat.

Ants on a Log
Cottage Cheese with Pineapple

While picking up smoked salmon at Northern Waters, I’ll also get some smoked sausage for lunches. To make ants on a log, just spread soy butter (or another butter version) on celery and top with raisins.

Italian Pasta Salad
Dried Cranberries

You can use wheat or gluten free pasta for the salad. Enjoy it the night before and send for lunch the next day.
