Radish Leaf Pesto

One of our quests this summer is to find ways to use all aspects of the produce grown in our garden. We've been harvesting lots of radishes and I thought if I can make a good pesto from mixed greens and garlic scapes, then might as well try radish greens. Mixed together with quinoa veggie curls and a garden side salad, it made another fabulous fresh and fast summer meal!

Radish Leaf Pesto

Mixed the following in a food processor:

1 bunch of radish greens

1 garlic

Zest of one lemon

Juice of half a lemon

1/4 cup sunflower seeds (or nuts of your preference)

1 t salt

1/2 t ground pepper

With the processor going, add 3 T olive oil

Mix 1/2 cup parmesan with pesto and mix with your favorite pasta, add to a sandwich, or whatever else you desire.
