Menu for the Week of July 16, 2012

Several salads, using garden goodies, take center stage this week. Two grilled entrees, prepared with local meat, balance the equation and make for another week of can't wait to eat pleasures!

Monday: Cold Seasame Noodles with Summer Vegetables

Tuesday: Grilled Steak Salad with Tomato Vinaigrette

Wednesday: Chicken Under a Brick with Avocados and Chiles

Thursday: Grilled Chicken Salad

I plan to use leftover chicken from the night before, some of our garlic scape pesto and pick a few of the “other” salads mentioned in the recipe using produce from our garden to make our own simpler version of the salad.

Friday: Steak Skewers with Scallion Dipping Sauce with Grilled Vegetable and Rice Salad

I plan to make a modified version of the veggie rice salad, omitting the okra.
