The other day I posted the following question to my blog and a food group I'm in:

What is your favorite, make ahead meal? Need something in between camp and 5:30 soccer Thursday. Some type of salad came to mind, but Skoogie said, "Not salad again." Would love ideas!!

Taco fixings and quesadillas were mentioned. The kids often eat quesadillas for lunch and we just had tacos but the posts triggered an idea...

Cheesy layered tomatilla and chicken enchiladas. We haven't had it in several years. I can't wait to have it again! I'm making it tomorrow night and will bake it Thursday.
