Menu for the Week of June 4, 2012

Some easy to prepare meals for a busy time of year!

Monday: Black Bean & Tomato Quinoa

If you haven’t tried Quinoa yet, this is a great FAST recipe to try out!


Tuesday: Asian Lamb Chops

The sauce is lick-the-plate good! We served with Asian Coleslaw and didn’t have any to spare.

Asian-style Coleslaw

Chop & toss together:

½ cabbage, shredded

3-4 carrots, shredded

2 T Rice Wine Vinegar

1 T Roasted Sesame Seed Oil

½ t Sugar (adjust to taste)

1 t Seasame Seeds

1 t Fish Sauce (or more to taste)

Pinch of Salt

Pinch of Red Pepper Flakes


Wednesday: Mexican Salad

Easy, light meals that can be primarily prepped ahead of time are the name of the game with the crazy end-of-year wrap-up schedules!

Ingredients:

Choice of lettuce, 6-8 cups

1 avocado, diced*

2 tomatoes, chopped

1/3 cup red pepper, chopped

1/3 cup red onion, chopped

¼ cup cilantro, chopped

½ cup celery, chopped

½ cup frozen corn kernels, thawed

¼ cup pinto beans, cooked

¼ cup black beans, cooked

*Cut avocado in half, remove the pit, and then cut lines vertically & horizontally across ¼ inch apart, remove with a large spoon.

Dressing:

½ cup olive oil

2 cloves garlic, minced

2 t cumin

2 t ground coriander

½ cup lime juice

¼ c chopped green onions

¼ c cilantro

½ t salt

½ t agave (or to taste)

¼ t cayenne (or to taste)

Heat oil on stove. Add garlic, cumin and coriander, cook for 1-2 minutes. Pour into a blender or food processor along with other ingredients and blend until smooth.


Thurday: Chili Dogs

Add the following quick-make chili to your favorite hot dog, top with cheese and enjoy!


Easy Chili

Ingredients:

1 pound Ground Beef

2 15 ounces Black Beans

1 8 ounce can Tomato Sauce

1 c Salsa

1 T Chilie Seasoning

Directions:

Brown the beef. While beef cooks, drain the beans and mash slightly. Add tomato sauce, salsa and chili seasoning in with the ground beef. Cook over medium heat for about 10 minutes or thoroughly heated.


Friday: Steamed Asian Chicken Dumplings

We served the dumplings with rice and substituted ground chicken rather than grinding it ourselves.
