Weekly Menu for the Week of February 20, 2011

We're keeping things simple next week, allowing for playtime during the kids break.

Monday: Greek Salad with Orzo & Black-eyed Peas


Tuesday: Cubano Wrap with Oven Baked Sweet Potatoes & Kale Salad

Cubano Wrap

Ingredients:

¼- ½ lb Sliced Porketta

¼- ½ lb Sliced Ham

¼- ½ lb Swiss Cheese

Pickles

Mustard

Directions:

For flexibility, heat the tortillas in pan on stove for 30 seconds each side or if you have a gas stove, heat directly on flames of burner for a few seconds per side using tongs to flip. Spread mustard on each warmed tortilla, add some pulled pork, a slice of ham, a slice of Swiss cheese, some pickles. Before wrapping, place under broiler for a few minutes to melt the cheese, roll the tortilla and serve.


Oven Baked Sweet Potato

Ingredients:

Olive Oil

2 Medium Sweet Potatoes

Salt

Directions:

Preheat oven to 400° F.

Cut sweet potatoes into cubes and drizzle with olive oil. Cook 35-45 minutes until golden.


Wednesday: Slow Cooker Pork with Vermicelli Rice Noodles


Thursday: Spinach and Ricotta Dumplings with Side Salad



Friday: Roast Pork Tenderloin with Apricot-Miso Glaze and Rutabagas with Carmelized Onions
