A SUPER bowl of Nachos


We have a busy week of celebrations, so I thought I'd share the recipe for the "SUPER bowl" of Nachos we enjoyed last weekend. Enjoy them at your next celebration!


Tortilla Chips

1 1b Ground Beef, mixed with Frontera taco mix, cook until browned

¾ c. Chorizo, cooked

1 can Refried Beans, warmed

Cheddar Cheese, shredded – at least 8 ounces

Black Bean Spread

Pickled Jalapenos

Salsa, Sour Cream & Guacamole to top

Prepare Black Bean Spread

Blend together:

15 oz Black Beans

2 T Lemon Juice

1 ½ t Soy Sauce

½ t Cumin

½ t Cayenne (or less depending on spice level desired)

Salt to taste

Prepare Guacamole

3 Ripe Avocados

1 T Onion or Red Onion, Minced

1 Garlic Clove, Minced

1 Jalapeno or ½ Serrano, Seeded & Minced

1/3 c. Cilantro, Chopped

Pinch Salt

½ t Cumin

2 T Lime Juice

Cut avocado in half, remove the pit, and then cut lines vertically & horizontally across ¼ inch apart, remove with a large spoon. Mash avocados slightly and mix with remaining ingredients.

Alternate chips with other ingredients, bake at 350 degrees until cheese is melted. Serve with guacamole, salsa, sour cream and pickled jalapenos.
