Indonesian Chicken Satay with RICE

Rice is life by Rita Golden Gelman

Rice is Life is set on the island of Bali and portrays the RHYTHM of the rice growing season and the importance of rice within the Asian culture and around the world. A series of poems tours the rice fields, or sawahs.

A few fun facts about rice from one of O's Picture Atlases (yes, he has more than one):

-Rice is eaten daily in over half of the world

-The word for food in Chinese is the same word for rice

-Rice is a type of grass and is one of the oldest plants in the world

Appropriately, our Indonesian meal this week featured rice. We enjoyed an Indonesian Chicken Satay with a Soy Butter dipping sauce, Brown Rice and Quick Pickled Cucumbers. I LOVE that we can still enjoy the essence of Thai & Indonesian peanut sauce simply by substituting soy butter or sunbutter!

Quick Pickled Cucumbers

Mix together:

2 large cucumbers, peeled, seeded, cut in half and thinly sliced

1/2 medium red onion, thinly sliced

1 teaspoon sugar

1/4 cup rice vinegar

Coarse salt and ground pepper
