Menu for the Week of September 26, 2011

In Tuesday's post, I mentioned how we are taking "Little Bites" to navigate through Skoogie's current narrow food focus. I pulled out my copy of The Family Dinner for some great dinner games and a Taco Tuesday recipe. Maybe she'll sit long enough to try a few more little bites.

Monday: Chickpea and Couscous Salad

Tuesday: Gary’s Tuesday-Night Tacos from The Family Dinner Cookbook Cookbook

Not your typical cookbook, it provides great ideas of ways to enjoy dinner together as a family. The Foreward by Harry Karp:

I encourage you to think of family dinner as your child’s nightly dress rehearsal for adulthood, a protected space for him or her to master patience, conversation, and cooperation … one meal at a time.

Wednesday: Slow Cooked Cannellini Beans & Sausage

Last week got busy so we ended up getting take-out, and are trying for this recipe again this week. I plan to substitute fresh tomatoes and Swiss chard.

Thursday: Chicken Panini with Pesto & Mozzarella with Tomato Soup

I am going to adapt this recipe and use some of our tomatoes instead of/or in addition to red pepper, whichever strikes my fancy as I make them. I’ll use pesto that I made with pumpkin seeds. I’m guessing Skoogie will try a quarter of a sandwich and then request a plain cheese. Little Bites!

Friday: Lamb Tagine with Chickpeas & Apricots

Using some of our local lamb for this tagine.
