Menu for the week of May 9, 2011

As we prepare for the coming week, a special tribute goes out to all the moms. I share with you a photo of an early Mother’s Day surprise. Each morning, with animated excitement, Skoogie helps me water the plant and the sunflower is beginning to poke through the dirt. Special thoughts, love and appreciation to all the moms who nourish, care for and sprout your beans!!!!
We can’t get enough of Jamie Oliver, and are trying more of his tasty, quick-to-prepare meals.
Monday: Southern Indian Vegetable Curry
A great way to eat lots of fabulous veggies in one bowl!
Tuesday: Oriental Pork with Noodles
I’m not eating mushrooms right now, as they are a high yeast food. Instead, we’ll replace with carmelized onions and other greens. Pak choi is a green in the brassica family; bok choy is another alternative.
Wednesday: Spring Minestrone with Bread
I learned a new word when preparing for this week’s meal: courgettes is another word for zucchini. Modify the soup to your veggie preferences and serve with your choice of bread.
Thursday: Steak & Salsa Verde with Kale Salad
I’ll post my newest Kale salad rendition on Tuesday in the Brassy Brassica section…stop back!
Friday: Barbequed Pork & Italian Style Greens
I’m always looking for new ways to prepare greens and look forward to this recipe paired with the pork!
